Origin and properties: Apricots come from all temperate and subtropical zones and the fatty apricot kernel oil is extracted from their kernels. The oil is light yellow to medium yellow in color and has a characteristic smell and mild taste. Apricot kernel oil is insoluble in water, slightly soluble in ethanol and soluble in lipophilic solvents.
